
Over the summer we got quite lazy with our eating habits, and we were consuming way too much processed food and relying too heavily on quick-cook options, like pasta and rice. Not to mention all the Kung Pao tofu from the Chinese restaurant at the corner. Yikes.
For the last several weeks, I've made a concerted effort to get back to preparing fresh, whole foods for our meals every evening, with more emphasis on steamed vegetables, especially green and orange ones. Kale is our new BFF.
Dark leafy greens like kale are incredibly nutritious, full of vitamins K, A, and C, and a good source of calcium. I just steam it lightly with some other veggies, but one of the best recipes I've ever made with kale comes from one of my favorite cookbooks, Vegan Planet: Balsamic Glazed Carrots and Kale.
