
Here's my recipe for basic chili:
1 onion
1 green or 1 red pepper
1 package SmartGround
1 package chili seasoning (it's just easier!)
1 large can diced tomatoes
1/4 cup vegetable broth
1 can kidney beans
1 can black beans
(optional to stretch the recipe: 1 can garbanzo or pinto beans)
Saute the onion and pepper in a little olive oil until just soft. Add the SmartGround and chili seasoning. Stir to combine and saute a few minutes longer. Add the tomatoes and vegetable broth and cook until bubbly. Turn down the heat to low and add the beans. Cook until the beans are heated through. Serve hot with rice, cornbread, or steamed veggies.
We make this a lot. It's quick, easy, and delicious!
