
Here's my version of a simple lentil dhal recipe that I found online. Very yummy, although next time I would cut back on the vindaloo paste to make it a smidge less spicy.
2 cups red lentils
4 cups water
1 onion, chopped
2 cloves garlic, chopped
2-3 tbsp vindaloo curry paste
1 can coconut milk
Cook the lentils in the water until soft. In a pan, saute the onions and garlic. Add the vindaloo paste and cook for a minute or two. Add the coconut milk and stir to combine. Stir in the lentils and cook until heated through. Let the dhal set for several minutes (unless you like it quite soupy, in which case, eat it immediately!). Serve with your favorite side dish.
I sprinkled some cashews on top and served the dhal on a bed of steamed kale. This has to be the easiest comfort food in the world!
